Cooking With Kids: S’mores Pops and S’mores Brownie Bites

Last week, my mom and I embarked on an eight week adventure. We are teaching an after school class for kids dubbed “Sweet Treats,” where we will be creating a plethora of tasty concoctions with the little ones! Getting creative in the kitchen with small children can be a bit of a challenge, so for the next eight weeks I want to share the recipes we create!

Each week of class, we will have a theme. To start, the theme was: S’MORES! Who doesn’t love some marshmallowey, chocolatey, graham crackery goodness? During our hour long class, we created a few different treats…starting with S’mores Pops!

Aren’t they fun to look at? They’re very easy to make – even at age 3 or 4! They’re fun for the kids to create, and I would definitely be happy to display them as a sweet treat at a party or get-together for my friends. So cute!

S’mores Pops

Ingredients

Large jet-puffed marshmallows

Thin popsicle sticks or lollipop sticks (found at craft stores)

Milk chocolate candy melts

Graham crackers

Gallon sized ziplock bag

Wax paper

Instructions

1. Place 2-3 graham cracker sheets inside a ziplock bag, then use a rolling pin to gently crush the crackers into crumbs. This was a fun step for the kids to get involved with. The graham crackers are easy enough to crush by hand, but a rolling pin or other kitchen tool is good for assistance. When the graham crackers are crushed, carefully pour them into a shallow dish and set aside.

2. Set a large piece of wax paper over your work surface. Insert a popsicle/lollipop stick into the center of each marshmallow to be dipped and set on the wax paper.

3. Meanwhile, begin melting the chocolate candy melts in the microwave in a dish, according to package instructions (microwave 30 seconds at a time, stir, and repeat until chocolate is melted fully). You will need the chocolate to be at least 1/2 to 1 inch deep, so using a smaller dish is preferable so you do not waste chocolate! I used small rammekins for this step.

4. When the chocolate is melted, hold a marshmallow by the stick, and dip into the chocolate so it hits halfway up the marshmallow. Remove the marshmallow from the chocolate and hold above the chocolate dish, allowing any excess to drip off. Then, gently dip and roll the marshmallow into the graham cracker crumbs, covering the area with chocolate fully. Set upright on the wax paper to dry (about 10 minutes). Enjoy!

The other s’mores themed sweet treat we created were some s’mores brownie bites! These little guys were very simple to make – all it takes are some more marshmallows, graham crackers, and a brownie mix!

Since we were making these brownie bites with small children, the marshmallows on top were not toasted, but if you wanted to get a golden brown toasting of the marshmallow, simply place the brownie bites back into the oven for a few minutes (watching carefully) to brown them. Eating them while still warm would be the best, in that case! YUM!

S’mores Brownie Bites

Ingredients

1 brownie mix, any chocolate variety desired

2-3 sheets graham crackers

Large jet-puffed marshmallows

Mini cupcake liners (if desired)

Ziplock bag

Instructions

1. Preheat oven and prepare brownie mix according to package instructions.

2. Line a mini cupcake pan with mini cupcake liners, or spray the pan thoroughly with nonstick cooking spray.

3. Crush/crumble the graham cracker sheets into crumbs inside the ziplock bag using a rolling pin or by hand. Scoop a small amount into the bottom of each mini cupcake liner. You need just enough to cover the bottom in a thin layer – if the graham crackers are too deep, they will crumble off after baking and dry out your brownies.

4. Use a small scoop (a tablespoon sized spoon would work well) to scoop the prepared brownie batter into the cupcake liners, on top of the graham crackers. Fill the wells almost to the top. Place the brownies into the oven to cook; about 10 minutes.

5. As the brownies are baking, use a knife to cut the marshmallows in half, so you have enough to cover the top of each brownie being cooked.

6. When the brownies are done baking, remove from the oven and place a marshmallow half, sticky side down, on to the top of each brownie bite. Enjoy!
