Cosmollini

I love a fancy cocktail. When I’m out at a restaurant, it is nice to find a menu with a selection of libations I do not normally enjoy at home. However, sometimes those complicated cocktails are difficult to recreate. Most of the time, I end up sticking to a glass of wine or a gin and tonic when I’m in the comfort of my own home…because I’m lazy.

The one martini I sometimes whip up at home is a Cosmopolitan – the ingredients are simple and I always have all of them on hand anyway. However, I’m not going to be talking about a Cosmopolitan today. I want to introduce you to a new cocktail favorite of mine: the Cosmollini. And I promise you, it is not much more complicated to create, and it is very delicious!

And it’s pretty too! That never hurts…

Basically, the cocktail is a mashup of a Cosmopolitan and a Bellini – if you’re a fan of both drinks, then you will be very pleased!

The ingredients and steps are simple:

Cosmollini

Serves 2

Ingredients

2 oz vodka

1/2 oz Cointreau

1 oz cranberry juice

1 oz peach puree

Ice cubes

Sparkling wine or champagne, to top

Instructions

1. First, create the peach puree. Slice a fresh peach into chunks and place in a food processor with 1 tsp of sugar. Blend until liquified. The puree of one peach should be enough to create about 6 Cosmollinis. Store extra puree in the refrigerator.

2. Add ice cubes, vodka, Cointreau, cranberry juice, and peach puree to a cocktail shaker. Shake vigorously for 20-30 seconds. Strain equally into 2 martini glasses.

3. Pour a splash of sparkling wine or champagne on top of each martini (about 1 ounce). Sip and enjoy!

 

I love the Cosmollini recipe for it’s simplicity! The peach puree adds a nice touch to the regular flavor of a Cosmopolitan, and the champagne floater on top adds a nice fizzy punch. If you’re just going to be making a small batch of these martinis at home, I would suggest purchasing a miniature bottle of champagne/prosecco instead of a full sized one – they are the perfect size for topping cocktails!

    I’m going to give this drink a try! My favorite cocktail out is a Dark & Stormy – just rum, ginger beer & lime. If I’m going to be ordering more than one, I have a glass of champagne or a vodka soda.
